Cape Byron Distillery has a knack for producing whiskies that capture the character of Australia’s Northern Rivers — and their Stone Beer Cask release is no exception. This limited-edition single malt is finished in casks that previously held Stone & Wood’s Stone Beer, creating a perfect opportunity for a boilermaker pairing.

About the Release

The whisky begins life as Cape Byron’s signature single malt, crafted from Australian-grown barley and matured in American oak. It then spends time in barrels that once held Stone Beer — Stone & Wood’s rich, malty seasonal release brewed using volcanic stones heated in a fire (a nod to ancient brewing traditions).

The result is a whisky that layers the distillery’s tropical fruit and honeyed notes with a malty, chocolatey depth from the beer cask finish.


Tasting Notes

Appearance: Deep amber with reddish highlights.

Nose: Dark chocolate, roasted malt, toffee, and subtle dried fruit, with a lift of vanilla and gentle oak spice.

Palate: Rich malt sweetness up front, followed by cocoa, coffee grounds, and a touch of burnt orange. Hints of tropical fruit peek through from the base spirit, giving brightness to the darker beer-driven notes.

Finish: Medium to long, with lingering chocolate malt and a warming spice.


Final Thoughts

The Cape Byron Stone Beer Cask is a beautifully integrated collaboration between two local icons. On its own, it’s a rich, complex dram. Paired with the beer that seasoned its casks, it becomes an experience — the malt, chocolate, and roasted flavours bouncing between glass and pint.

Limited releases like this don’t stay on shelves long, so if you spot one, it’s worth grabbing — and maybe a bottle of Stone Beer to go with it.
